Chicken Cacciatore
Cento Chicken Caccitore Yum
7 tbsp Cento Imported Olive Oil
1 1/2 lb chicken breast, boneless and skinless
1 cup onion, chopped
5 Bellino Whole Garlic Cloves, lightly chopped
1 cup Cento All Purpose Chicken Broth
1 1/2 cup Cento Chef's Cut® Tomatoes
1 jar Cento Red & Yellow Roasted Peppers (12 oz), rinsed
3 oz Cento Gaeta Olives, rinsed and halved
1 can Cento Mushroom Stems and Pieces (8 oz), rinsed
1 tsp salt
1/4 tsp Cento All Natural Oregano
1 Cento Whole Hot Chili Pepper

In large skillet, heat oil; sauté chicken 2-3 minutes on both sides. Remove from skillet and cut into 1 inch pieces; set aside. Without draining, add onion and garlic to pan; cook until onions become translucent, about 3 minutes. Add broth and bring to boil; add chicken and tomatoes. Cover skillet; let simmer for 15 – 20 minutes allowing chicken to absorb liquid. Add peppers, olives, mushrooms, salt, oregano and chili pepper, simmer for an additional 3-5 minutes. Mix well; transfer to serving platter. Serves 6.
