What are Artichokes?

Artichokes are a type of edible thistle that are commonly used in Mediterranean and Middle Eastern cuisine. They are native to the Mediterranean region and have been cultivated for thousands of years. The part of the plant that is typically consumed is the immature flower bud, which is harvested before it blooms. The bud has a tight, compact structure made up of layers of fleshy, edible leaves, surrounding a central "choke" of inedible fibers and immature flower structures. Artichokes are sometimes referred to as a “superfood” due to their high amounts of vitamins and nutrients. Artichokes have a unique flavor that is described as nutty, earthy, and slightly bitter. They are often used in dips, salads, soups, and pasta dishes, and can also be roasted, grilled, or steamed and served as a side dish. The outer leaves of the artichoke are tough and fibrous, but the tender inner leaves and heart are considered a delicacy.

Different Ways to Cook Artichokes

Whether it’s fresh from the ground or right out of the can, there are many different ways to cook and enjoy the mighty artichoke.

Fresh artichokes can be steamed, broiled, or grilled, but must be prepped beforehand. The heart of the artichoke is surrounded by petals that act as a barrier. The stems and leaves are cut and trimmed in order to reach the heart. The heart is the sweet, tender meaty center, containing a delicious earthy flavor.

Canned and jarred artichokes are already prepped and packed in brine to help maintain freshness and make for a great shelf-stable product. You can enjoy artichokes as a snack, right from the jar, or add them to your own recipes. Artichokes add depth to any of your favorite chicken, pasta, or risotto recipes.
